  • 68 cheddar cheese slices
  • 1/2 cup finely chopped onions

Instructions

  1. Prepare the special sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, Worcestershire sauce, and garlic powder until smooth. Adjust seasoning to taste. Refrigerate to allow flavors to meld.
  2. Shape and smash the patties: Divide ground beef into 3-ounce balls. Heat a cast iron skillet or heavy pan over medium-high heat and lightly oil it. Place a beef ball on the skillet and immediately press firmly with a spatula to create a thin patty. Season with salt and pepper.
  3. Cook and melt the cheese: Cook patties for 2-3 minutes until crispy and browned. Flip each patty and place a slice of cheddar cheese on top. Continue cooking for another minute until cheese melts and patties remain juicy.
  4. Warm the tortillas: While burgers cook, lightly toast tortillas in a separate pan with butter or oil until soft, pliable, and slightly crisp around the edges.
