Ingredients

Scale

Protein

  • 2 cups cooked, shredded chicken

Pasta

  • 8 ounces spaghetti, cooked al dente

Cheeses

  • 4 ounces cream cheese
  • 1 ½ cups shredded sharp cheddar cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese (plus extra for topping)

Dairy & Fats

  • 1 ½ cups milk
  • 2 tablespoons butter

Vegetables & Aromatics

  • 1 small onion, minced
  • 2 cloves garlic, minced

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Cayenne pepper or paprika (optional, ¼ teaspoon)

Instructions

  1. Prepare the Spaghetti: Cook spaghetti noodles according to the package instructions until just al dente. Drain and set aside to avoid overcooking when baked.
  2. Cook and Shred the Chicken: If using raw chicken, poach or roast until fully cooked, then shred into bite-sized pieces. Rotisserie chicken can be used for convenience.
  3. Make the Cheese Sauce: In a saucepan over medium heat, melt butter. Add minced onion and garlic and sauté until fragrant. Stir in cream cheese until smooth. Gradually whisk in milk, then add shredded cheddar and Parmesan cheeses. Season with salt, pepper, and optional cayenne or paprika. Stir until sauce is creamy and well combined.
  4. Combine Ingredients: In a large mixing bowl, gently toss together the cooked spaghetti, shredded chicken, and cheese sauce until everything is evenly coated.
  5. Bake the Casserole: Pour the mixture into a greased baking dish. Sprinkle extra cheddar or Parmesan cheese on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until bubbly and golden on top.

Notes

  • Don’t overcook the spaghetti; slightly undercooked pasta will stay firm after baking.
  • Shred chicken finely for even distribution throughout the casserole.
  • Use freshly shredded cheese for better melting and flavor compared to pre-shredded cheese.
  • Taste the cheese sauce before mixing and adjust seasoning as needed.
  • Allow the casserole to rest for 5-10 minutes after baking to set properly before serving.
