Instructions

  1. Prepare the dough: Mix all-purpose flour, sugar, and cold unsalted butter together, cutting the butter into the flour until the mixture resembles coarse crumbs. Add the egg, milk, and vanilla extract, kneading lightly until the dough just comes together. Wrap in plastic and chill for at least 30 minutes.
  2. Roll and cut the dough: Roll chilled dough on a lightly floured surface to about 1/8 inch thickness. Using a rectangular cutter, cut out cookie shapes double the size of your filling. Make half the pieces slightly smaller for the tops.
  3. Add the strawberry filling: Place a spoonful of strawberry jam in the center of each larger dough rectangle, being careful not to overfill.
  4. Seal the cookies: Brush edges of the larger pieces with egg wash, cover each with a smaller dough piece, press firmly, and crimp edges with a fork for a secure seal and decorative finish.
