  • 1/2 cup green olives, sliced

  • 1/2 pound ground Italian sausage
  • 1/2 cup chopped pepperoni
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning (oregano, basil, etc.)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and carefully remove seeds and membranes to create hollow shells. Lightly brush peppers with olive oil and place them cut-side up in a baking dish to soften slightly during baking.
  2. Cook the Filling: In a skillet over medium heat, warm olive oil. Sauté chopped onion and minced garlic until fragrant and translucent. Add ground Italian sausage and cook until browned, breaking it apart. Stir in diced tomatoes, green and black olives, chopped pepperoni, Italian seasoning, salt, pepper, and optional red pepper flakes. Let flavors meld for about 5 minutes.
  3. Combine with Cheese: Remove the skillet from heat and mix in most of the shredded mozzarella cheese, reserving some for topping. This cheesy and hearty filling is now ready to be stuffed into the peppers.
  4. Stuff and Bake: Generously fill each bell pepper with the prepared filling. Sprinkle the remaining mozzarella and Parmesan cheese on top. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until cheese is bubbling and golden brown.
  5. Cool and Serve: Let the stuffed peppers cool for a few minutes before serving to allow the filling to set and make handling easier.
