Instructions

  1. Prepare the Tofu: Press the extra-firm tofu for 15-30 minutes to remove excess water, then crumble it into bite-sized, uneven pieces to mimic scrambled eggs.
  2. Sauté Aromatics and Vegetables: Heat olive oil in a pan over medium-high heat. Add finely chopped onion and minced garlic and sauté until fragrant and translucent. Add diced bell peppers and chopped spinach or kale. Cook for a few minutes until vegetables soften but still retain some crunch.
