Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and chopped

Dry Ingredients

  • 1 ¾ cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt

Wet Ingredients

  • 1 ¼ cups plant-based milk (almond, oat, or soy)
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons light oil (coconut or vegetable oil)

Instructions

  1. Roast and Mash the Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and chop the sweet potatoes into cubes. Roast them on a baking sheet for 25-30 minutes until tender and caramelized. Once cooled slightly, mash the sweet potatoes until smooth to bring out natural sweetness and moisture.
  2. Prepare the Wet Ingredients: In a large bowl, combine the mashed sweet potatoes, plant-based milk, maple syrup, vanilla extract, and oil. Mix well until the mixture is creamy and fully incorporated.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. These will form the base structure and add flavor to your waffles.
  4. Combine Wet and Dry Ingredients: Pour the dry ingredients into the wet mixture. Gently stir until just combined, taking care not to overmix to maintain a light and airy texture in your waffles.
  5. Cook the Waffles: Preheat and lightly grease your waffle iron. Pour batter onto the waffle iron, close the lid, and cook for 4-6 minutes until the waffles are golden brown and crisp. Repeat with remaining batter.

Notes

  • Choose firm, evenly sized sweet potatoes for consistent roasting and flavor.
  • Do not overmix the batter to avoid dense waffles; stir gently until just combined.
  • Ensure your waffle iron is hot enough to create a crisp exterior without burning.
  • Prepare the batter the night before for quick and easy mornings.
  • Optional: Add flaxseeds or chia seeds to the batter for extra fiber and texture.
