Perfect for casual gatherings, lunchboxes, or cozy nights in, they are quick to prepare, kid-friendly, and fully customizable to suit your taste and dietary needs.

Ingredients

Base Ingredients

  • Pizza Dough (store-bought or homemade) – enough to roll out into a rectangle about ¼ inch thick
  • Tomato Sauce – thinly spread over dough
  • Mozzarella Cheese – shredded, to sprinkle over sauce

Vegetable Fillings

  • Bell Peppers – diced
  • Mushrooms – diced
  • Spinach – chopped
  • Olives – sliced

Flavorings

  • Italian Herbs (oregano and basil) – to sprinkle
  • Olive Oil – for brushing tops to crisp

Instructions

  1. Prepare the Dough: Roll out your pizza dough on a lightly floured surface into a rectangle about ¼ inch thick, making it easy to layer the fillings and roll up tightly.
  2. Spread the Sauce: Evenly spread a thin layer of tomato sauce over the dough, leaving a small border around the edges to prevent overflow during baking.
  3. Add the Fillings: Sprinkle shredded mozzarella cheese first, then distribute a colorful mix of diced bell peppers, mushrooms, chopped spinach, and sliced olives evenly over the sauce. Finally, sprinkle with Italian herbs to infuse classic pizza aroma.
  4. Roll It Up: Starting from one long edge, carefully roll the dough into a tight log, ensuring the fillings stay inside and do not spill out.
  5. Slice and Arrange: Cut the rolled log into 1 to 1.5 inch thick slices and place them cut-side up on a baking sheet lined with parchment paper or a silicone mat, allowing enough space between rolls for expansion while baking.
  6. Bake to Golden Perfection: Brush the tops of the rolls with olive oil to ensure a crispy, golden crust. Bake in a preheated oven at 375°F (190°C) for 18-22 minutes, or until golden brown and the cheese inside is bubbly and melted.

Notes

  • Don’t overload the rolls with filling to prevent bursting during baking.
  • Chop vegetables into small, uniform pieces to help them cook evenly and ease rolling.
  • Use cold or slightly chilled dough for easier rolling and better shape retention.
  • Brush with olive oil before baking for a crisp, golden crust and to avoid dryness.
  • Serve the rolls warm straight from the oven for the best melty, fragrant experience.
